Holiday Cocktail

It’s the holiday season and we are so excited for dazzling lights, cool weather, holiday cheer, and of course, holiday cocktails. After all, ‘tis the season, right?

To celebrate right, we bring you a colorful concoction of pomegranate, thyme, and (for those over 21) gin! It’s about thyme (ha!) we had a colorful cocktail recipe:


  • ¼ cup gin
  • 1 tbsp lemon juice
  • 1 tbsp thyme syrup (1/2 cup pure cane sugar, ½ cup water, 5 sprigs of thyme)
  • 2 tbsp pomegranate juice
  • Club soda for fizz effect
  • Thyme for some garnish (but actually add thyme as a garnish)!

In a small saucepan over medium heat, combine cane sugar, water, and thyme. Stir until sugar is dissolved. Bring to a simmer and then immediately turn off the heat, cover, and allow to cool for 15 minutes until syrupy.

Mix gin, lemon juice, syrup, and pomegranate juice in a shaker with ice and shake vigorously. Pour your hard efforts over ice in a cocktail glass.

Top with club soda and stir to ensure mixed.

Garnish with thyme and/or pomegranate arils.

And voila! You’ve served a classy holiday cocktail in no thyme at all.
