Ingredients:
2-3 Cucumbers
2-3 Avocados
½ bunch of Cilantro
½ Lime
Pinch of salt & pepper (Since they’re not wearing green)
3-4 Cloves of Garlic (If only it were four leaf clovers!)
Directions
- Slice the cucumbers and place them on a flat surface.
- Scoop the avocados out of the shell and throw them into a food processor with cilantro and squeeze ½ a lime over the top. Add a pinch of salt and pepper then the cloves of garlic. Blend until creamy.
- Smear the avocado filling on the cucumber slices.
- Roll the cucumber and place on a serving dish.
- Serve and enjoy!
Bonus: Sprinkle chili powder on top for a little punch of flavor.
