Avocado Rollups for St. Patrick’s Day by Wanna Bite

Healthy and delicious don’t always go hand in hand, but with the luck of the Irish we found a recipe that is both! These avocado rollups are easy to whip up for last minute parties or make in bulk. How are you celebrating St. Patrick's Day?

2-3 Cucumbers

2-3 Avocados

½ bunch of Cilantro

½ Lime

Pinch of salt & pepper (Since they’re not wearing green)

3-4 Cloves of Garlic (If only it were four leaf clovers!)

  1. Slice the cucumbers and place them on a flat surface.

  2. Scoop the avocados out of the shell and throw them into a food processor with cilantro and squeeze ½ a lime over the top. Add a pinch of salt and pepper then the cloves of garlic. Blend until creamy.

  3. Smear the avocado filling on the cucumber slices.

  4. Roll the cucumber and place on a serving dish.

  5. Serve and enjoy!

Bonus: Sprinkle chili powder on top for a little punch of flavor.

Edible Holiday Wreath by Wanna Bite

‘Tis the season of holiday parties and we know how tough it is to find some healthy bites. Whether you’re hosting family at home or going to a pot luck, here’s a fun recipe that’s easy to make, good for you, and cute to boot.

Thanks to our partners Wanna Bite for this awesome recipe and video on Sleek Concrete!

2 crescent roll packages

French onion sour cream dip

Cherry tomatoes

Red bell pepper

Shape the wreath with crescent rolls, leaving a small amount of space between each roll (as they bake, they will spread). Bake according to package directions

Allow rolls to cool slightly then cover in sour cream dip. You could also use a cream cheese based dip as well.

Decorate with broccoli and tomatoes then cut out the red bell pepper into the appropriate shapes.

Simple as that! Move to a serving plate, or leave it on your countertop for an easy clean up. Happy holidays!
